Ingredients
- 4 Bell Pepeprs
- 8 oz Ground Turkey
- 1/4 Onion chopped
- 1 tbsp Basil fresh
- 2 garlic cloves minced
- 1/4 tsp salt
- 1/4 tsp pepper
- 14.5 oz canned low-sodium diced tomatoes
- 1/2 cup brown rice
- 3/4 cup low-fat cheddar cheese shredded
- paprika if desired
- fresh parsley if desired
Instructions
- Preheat the oven to 375℉.
- Cut the tops off of the bell peppers and discard the seeds and veins.
- In a pot of boiling salted water, cook the peppers for roughly 5-6 minutes. Drain immediately and place in a bowl of ice water to stop the cooking process.
- Drain the peppers and place them in a baking dish standing upwards.
- Over medium heat, heat a skillet and cook the ground turkey until it reaches an internal temperature of 165℉.
- Add the onion, garlic, basil, salt, pepper, tomatoes, and rice to the same pan and cook for 5-6 minutes, allowing the excess liquid from the tomatoes to evaporate.
- Remove the mixture from the heat and add ½ cup of the cheese.
- Fill each pepper with roughly ⅔ cup of the mixture to each bell pepper, or until the peppers are filled. Sprinkle with the remaining cheese.
- Bake for 20 minutes or until the peppers are tender.
- Remove from the oven and serve immediately!
