Greek Yogurt Chocolate Mousse with Fresh Strawberries

Dessert can be a challenge when one has a diagnosis of diabetes. However, it is important to remember that we are still allowed to have the occasional treat. Next time that happens try this delicious chocolate Greek yogurt mousse. Non-fat yogurt is whipped into a fluffy mousse and combined with honey, dark chocolate, and vanilla extract before being topped with springtime strawberries and whipped topping. The perfect treat for that sweet craving.

- 1/2 cup dark chocolate chips sugar-free
- 2 cups non-fat Greek yogurt plain
- 2 TBSP honey
- 1 tsp vanilla extract
- 1/4 cup milk skim
- 6 TBSP whipped topping sugar-free
- 2 cups strawberries
Add the chocolate chips to a microwave-safe bowl. Microwave the chocolate for 1 minute, then stirring before microwaving again in 15-second intervals or until the chocolate has melted.
In a mixing bowl, add your Greek yogurt, and with an electric mixer, whip the yogurt until it is light and fluffy. Add the honey, vanilla, milk and chocolate. Beat again until all of the ingredients have combined.
Once the chocolate has fully incorporated into the yogurt, divide the Greek yogurt mousse into 6 parfait cups or containers and top with 1/3 cup of chopped fresh strawberries and 1 TBSP of whipped topping.
