Lemon Herb Couscous

Couscous is a perfect side dish to a protein-rich meal. Tiny pearls of semolina are tossed in lemon, olive oil, and herbs for a tart and flavorful grain side dish!

- 1 cup pearl couscous
- 1 ½ cups water
- 1/2 lemon juiced
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 2 TBSP fresh herbs parsley, basil, oregano, chopped finely
- 1/4 cup olive oil
Over medium heat, add 2 tbsp of olive oil to a small saucepan. Add the pearl couscous to the oil and toast for 2 minutes or until the couscous begins to turn golden brown.
Pour the water, or chicken broth if you like, into the pot and bring to a boil. Once boiling, turn the heat down to low, cover the pot and simmer for 15 minutes or until the liquid is absorbed.
Turn off the heat and stir in the lemon juice, the remaining olive oil, black pepper, garlic powder, and fresh herbs. Taste and adjust the seasoning as needed. Serve warm!
