Okra is a southern staple that is often found in stews like gumbo or fried in a cornmeal crust. Hailing from East Africa, this vegetable was brought to America in the 1600s and swiftly became a staple on Southern dinner tables through similar traditional cooking practices, such as the previously mentioned gumbo, where okra acts as a thickening agent in this beloved stew. However, okra holds so much potential outside of just being stewed or fried. This recipe for oven-roasted okra highlights a simple preparation of this favorite summertime vegetable and only uses 4 ingredients to elevate the natural flavors of beautiful okra pods. Oven Roasted Okra
- 1 lb okra whole, fresh pods
- 1 TBSP olive oil extra virgin
- 1/2 tsp salt kosher
- 1/4 tsp smoked paprika
Mississippi Comeback Sauce (optional)
- 1/4 cup Greek yogurt plain
- 1/3 cup mayonnaise
- 2 TBSP ketchup sugar free
- 1 ½ TBSP hot sauce
- 1 TBSP Dijon mustard
- 1 tsp worcestershire sauce
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
Preheat the oven to 425℉ and line a large baking pan or cookie sheet with parchment paper.
While the oven is preheating, prepare your okra pods by chopping off their tops and slicing them in half, long ways. Once all the okra pods are cut, place them in a mixing bowl and toss with the olive oil, salt, and smoked paprika.
Lay the okra pods in a single layer on the baking pan and place in the oven, allowing them to roast for 20-25 minutes or until the okra is golden brown and crispy. Serve with a side of Mississippi Comeback Sauce for a flavorful dip that pairs perfectly with this crispy roasted okra.
