Sheet Pan Sausage and Veggies

This quick, make-ahead lunch is perfect for the busy office worker who doesn't want to spend all day meal-prepping for the week. This dish is flavorful and satisfying and full of protein, colorful veggies, and herbs.

- 16 oz smoked turkey sausage about 3 cups, cut into 1/2 rounds
- 2 cups sweet potato diced into 1/2 in cubes
- 2 cups broccoli florets
- 1 cup bell pepper diced into 1/2 cubes
- 2 garlic cloves minced
- 2 TBSP olive oil
- 1 TBSP italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper freshly ground
Pre-heat your oven to 400℉.
Slice the sausage into 1/2 rounds. Next, dice the sweet potato into small 1/2 in cubes. Do the same with the bell pepper, and also mince your garlic.
Add your sausage, sweet potato, broccoli, bell pepper, and garlic to a sheet pan. Drizzle with olive oil and sprinkle with a spice blend of your choosing; we like Italian! Toss the veggies and sausage until they are coated with the olive oil and spices.
Bake for 30 minutes or until the sweet potato is tender. Halfway through, you will want to toss the contents of the pan to ensure things cook evenly. Enjoy immediately, or put it into your favorite meal-prepping container for a healthy lunch!
