Clemson’s Susan Barefoot gives expert advice: The “rotten” truth about wasted food in America

Clemson University’s Dr. Susan Barefoot is a featured expert in a WHNS-TV news special report scheduled to air on FOX Carolina News Tonight at 10 p.m. tonight, February 26.

Barefoot, professor emerita of food microbiology and Clemson Extension Program Team Leader for Food Safety & Nutrition, talked to FOX Carolina news reporter Dana Wachter about ways to preserve food and to reduce food loss.

Wachter said, “The special report is a response to a recent report by the National Resources Defense Council (NRDC) that shows 40 percent of food in the United States goes uneaten.”

The NDRC reports Americans throw out the equivalent of $165 billion a year. The council says reducing waste by just 15 percent would be enough to feed more than 25 million underfed Americans a year.
