Grilled Peaches with Greek Yogurt

Grilled peaches make for a perfect summertime dessert. This is lightened up by adding vanilla Greek yogurt to the top of the peach instead of ice cream - an ideal combination for a delicious sweet treat that will keep your blood sugar happy.

Ingredients
  

  • 4 peaches halved and pitted
  • 2 tsp olive oil
  • 1/2 cup vanilla greek yogurt low fat
  • honey optional
  • balsamic glaze optional
  • chopped nuts optional
  • granola optional
  • mint leaves optional

Instructions
 

  • Heat a grill pan over medium-high heat. While that is heating, cut your peaches in half and pit them. Brush with olive oil, place them on the grill pan, and cut side down.
  • Allow to grill for roughly 5 minutes or until grill marks develop. Then flip and grill for another 3-4 minutes on the bottom.
  • Remove from the heat and place a dollop of yogurt on each half. Top with toppings of your choosing - some of our favorites include honey, balsamic glaze, chopped nuts, granola, and mint leaves.
