Grilled Peaches with Greek Yogurt

Grilled peaches make for a perfect summertime dessert. This is lightened up by adding vanilla Greek yogurt to the top of the peach instead of ice cream - an ideal combination for a delicious sweet treat that will keep your blood sugar happy.

- 4 peaches halved and pitted
- 2 tsp olive oil
- 1/2 cup vanilla greek yogurt low fat
- honey optional
- balsamic glaze optional
- chopped nuts optional
- granola optional
- mint leaves optional
Heat a grill pan over medium-high heat. While that is heating, cut your peaches in half and pit them. Brush with olive oil, place them on the grill pan, and cut side down.
Allow to grill for roughly 5 minutes or until grill marks develop. Then flip and grill for another 3-4 minutes on the bottom.
Remove from the heat and place a dollop of yogurt on each half. Top with toppings of your choosing - some of our favorites include honey, balsamic glaze, chopped nuts, granola, and mint leaves.
