In a food processor, add your flour, baking powder, and salt. Mix until just combined.
Next, stream in the 3 tbsp of oil, mixing until the flour mixture is fully coated and the mix appears sandy.
After adding the oil, pulse the mixture as you add the hot water. Continue to mix until you have a smooth dough. Let this set on the counter for 15 minutes. Before diving into the dough, knead for 30 seconds to 1 minute to bring it together and ensure it is soft.
Divide the dough into 8 equal pieces. When you're ready to make the tortilla, roll each dough ball out into a small circle.
Heat a griddle or skillet over medium heat. Cook the tortilla on each side for roughly 2 minutes, flipping once or twice in between.
You can place your tortillas in a clean dish towel to keep them warm and soft.
