- 1 jalapeno pepper small, diced with seeds removed
- 1/4 tsp kosher salt
- 1/4 tsp black pepper freshly ground
- 1 TBSP olive oil extra virgin
- 1 peach large, pitted and diced
- 3 green onion green parts only
- 1/2 tsp fresh oregano leaves
- 1 15 oz can of black beans drained and rinsed
Add the lime juice, jalapenos, salt, pepper, peaches, scallion, oregano, olive oil, and beans. Stir until well combined and season to taste.
Serve over the top of grilled meat like chicken, pork, or fish. Or simply serve with your favorite tortilla chips.
