Ingredients
- 1 lime juiced
- 1 jalapeno pepper small, diced with seeds removed
- 1/4 tsp kosher salt
- 1/4 tsp black pepper freshly ground
- 1 TBSP olive oil extra virgin
- 1 peach large, pitted and diced
- 3 green onion green parts only
- 1/2 tsp fresh oregano leaves
- 1 15 oz can of black beans drained and rinsed
Instructions
- Add the lime juice, jalapenos, salt, pepper, peaches, scallion, oregano, olive oil, and beans. Stir until well combined and season to taste.
- Serve over the top of grilled meat like chicken, pork, or fish. Or simply serve with your favorite tortilla chips.
