Crispy Oven Fried Okra
A southern favorite – fried okra. While this is a delicious treat, it is often deep-fried in oil. This version of oven bakes the okra until the cornmeal crust is crisp and tender. You won't be disappointed.

Ingredients
- 1/2 cup buttermilk low fat
- 1 egg large
- 2/3 cup yellow cornmeal
- 1 ½ tsp creole seasoning
- 3/4 tsp kosher salt
- 1 lb okra whole pods
- 2 TBSP canola oil
- lemon wedges optional
Instructions
- Preheat your oven to 450℉. Whisk together your buttermilk, water, and egg in a large bowl until well combined. In a separate bowl, stir together the cornmeal, creole seasoning, and ½ tsp of kosher salt.
- Line two baking sheets with parchment paper. On a clean work surface or cutting board, take one whole okra pod and smash it by rolling it with a rolling pin. You want the pod to slightly split open at the ends. Once smashed, add the pod to the buttermilk/egg mixture and coat well before tossing in the cornmeal. Place on the lined baking sheets. Repeat the process until all of your okra is coated.
- Place the baking sheets into your oven and bake for 20 minutes or until the okra is golden brown and crispy. Once cooked, remove from the oven and sprinkle with the remaining 1/4 tsp of salt. Serve with fresh lemon.
