Spinach Artichoke Dip
Spinach and artichoke is a classic party-time dip. However, it can often be heavy on fat and calories. This dip utilizes spreadable cheese wedges, light mayonnaise, and parmesan cheese to create the perfect creamy surroundings for spinach and artichoke hearts. Serve as an appetizer or have as a snack – either way, this dip will surely satisfy.

Ingredients
- 1 tsp olive oil extra virgin
- ½ yellow onion finely diced
- 1 15 oz canned artichoke hearts drained and rinsed
- 6 oz spinach coarsely chopped
- ¼ cup light mayonnaise
- 4 wedges light spreadable cheese
- 2 TBSP parmesan cheese freshly grated
- ½ lemon juiced
Instructions
- Preheat oven to 350℉. Heat a large skillet over medium-high heat and add the olive oil and onion. Saute for 5 minutes or until the onion is translucent.
- To the same pan, add the artichokes and cook for an additional 3-5 minutes. Next, add the spinach and cook until the spinach has wilted down.
- Combine the light mayonnaise, cheese wedges, and 1 TBSP of parmesan cheese in a microwave-safe bowl. Heat for 30 seconds to soften the mixture and mix well.
- Add the veggies to the bowl with the cheese mixture, along with lemon juice and the remaining parmesan cheese. Place into a baking dish and bake in the oven for 5 minutes. Serve warm with a side of tortilla chips, crostini, or veggies.
