Greek Yogurt Caesar Dressing

Caesar salad is a classic steakhouse staple. However, some iterations of this dressing utilize mayonnaise as the base to give it the perfect creamy consistency, adding additional fat and calories. This version skips the mayo and utilizes plain, non-fat Greek yogurt as the base of the dressing, allowing it to maintain the mouthfeel that we love but without guilt. Traditional Caesar ingredients are added such as anchovy paste for umami balance, garlic and dijon for some spice and kick, and lots of lemon juice for a little tang. Finished with salty parmesan cheese, you'll never know you're eating a "healthier" Caesar dressing. Give this one a try.

Ingredients

  • cup non-fat Greek yogurt plain
  • 1 tsp anchovy paste
  • 1 tsp Dijon mustard
  • 1 TBSP garlic paste
  • 2 TBSP lemon juice freshly squeezed
  • 2 TBSP olive oil extra virgin
  • ¼ cup parmesan cheese
  • kosher salt to taste
  • 1/2 tsp black pepper

Instructions

  • In a mixing bowl combine the Greek yogurt, anchovy paste, Dijon mustard, garlic paste, lemon juice, olive oil, parmesan cheese, salt and pepper. Mix well.
  • Refrigerate for at least 1 hour to allow flavors to marry. This can be stored in the refrigerator for up to 1 week.
