Pear and Fennel Salad

Ingredients
  

  • 4 cups mixed salad greens washed and dried
  • 2 pears sliced into thin pieces
  • ½ fennel bulb sliced thin
  • 2 TBSP pecans chopped
  • 1 TBSP walnuts chopped
  • cup pecorino cheese shaved into ribbons
  • 2 TBSP dried cranberries
  • salt and pepper to taste
  • 3 TBSP balsamic viniagrette

Instructions
 

  • In a large bowl, add the washed greens. Toss the greens in 3 TBSP of the linked balsamic vinaigrette. Once the greens are coated in dressing, top the greens with the sliced pear, sliced fennel, pecorino shavings, along with the dried cranberries, walnuts, and pecans.
  • Serve this salad with a healthy protein, such as grilled chicken, and a cup of butternut squash soup for a balanced and nutritious dinner.
