Sweet Potato Turkey Chili

Ingredients
- 1 lb ground turkey lean
- 1 yellow onion medium-sized, chopped
- 2 bell peppers chopped
- 1 jalapeno diced
- 2 garlic cloves minced
- 1 sweet potato large, chopped into 1-inch cubes
- 2½ TBSP chili powder
- 1 tsp cumin
- 1 tsp dried oregano
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 28 oz diced tomatoes canned
- 1 cup tomato sauce
- 1 14.5 oz kidney beans canned, drained and rinsed
- 1 14.5 oz black beans canned, drained and rinsed
- 1 TBSP olive oil
Instructions
- In a large pot over medium heat, heat 1 TBSP of olive oil and add the ground turkey to the pot. Cook until the turkey browns (roughly 3-4 minutes).
- Once the turkey has browned, add the onion, peppers, jalapeno, and garlic. Sauté for an additional 5 minutes or until the vegetables sweat, soften, and the onion becomes translucent.
- Add the chopped sweet potato, spices, diced tomatoes, and tomato sauce and bring to a boil. Depending on if the chili is too thick, consider adding 1 cup of water.
- Once the chili comes to a boil, reduce the heat to medium-low and simmer for 30 minutes uncovered or until the sweet potato is tender and the chili is at the desired consistency. Top with shredded low-fat cheese, low-fat sour cream, or avocado.
