Ingredients

For the Burger Patties

  • 1 lb ground turkey
  • ½ cup black beans drained and rinsed
  • ½ cup corn kernels
  • ¼ cup red bell pepper chopped
  • ¼ cup red onion chopped
  • ¼ cup cilantro
  • ½ tsp chili powder
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ¼ tsp salt kosher
  • ¼ tsp black pepper
  • 2 TBSP olive oil
  • 2 TBSP water

Optional for Serving

  • 4 whole-grain burger buns
  • 1 avocado sliced
  • ¼ cup salsa
  • 4 large lettuce leaves
  • 1 beefsteak tomato sliced

Instructions

  • To a large bowl, add the ground turkey, black beans, corn kernels, bell pepper, red onion, cilantro, and spices. Mix well until all ingredients are fully incorporated and evenly distributed. Form into 4 patties and place on a plate to the side.
  • Heat a large skillet with a lid over medium-high heat. Add the olive oil to the pan and heat for 1-2 minutes. Next, add the patties to the pan. Cook for 5-7 minutes on each side. Quickly add the water, cover the pan with a lid, and steam the burger patties for 2-3 additional minutes.
  • Once the burgers are cooked and have reached an internal temperature of 165℉. Take off the stove and place onto a whole-grain burger bun. Top with sliced avocado, lettuce, tomato, or salsa!
