
Southwest Turkey and
Black Bean Burger

Ingredients
For the Burger Patties
- 1 lb ground turkey
- ½ cup black beans drained and rinsed
- ½ cup corn kernels
- ¼ cup red bell pepper chopped
- ¼ cup red onion chopped
- ¼ cup cilantro
- ½ tsp chili powder
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp cumin
- ¼ tsp salt kosher
- ¼ tsp black pepper
- 2 TBSP olive oil
- 2 TBSP water
Optional for Serving
- 4 whole-grain burger buns
- 1 avocado sliced
- ¼ cup salsa
- 4 large lettuce leaves
- 1 beefsteak tomato sliced
Instructions
- To a large bowl, add the ground turkey, black beans, corn kernels, bell pepper, red onion, cilantro, and spices. Mix well until all ingredients are fully incorporated and evenly distributed. Form into 4 patties and place on a plate to the side.
- Heat a large skillet with a lid over medium-high heat. Add the olive oil to the pan and heat for 1-2 minutes. Next, add the patties to the pan. Cook for 5-7 minutes on each side. Quickly add the water, cover the pan with a lid, and steam the burger patties for 2-3 additional minutes.
- Once the burgers are cooked and have reached an internal temperature of 165℉. Take off the stove and place onto a whole-grain burger bun. Top with sliced avocado, lettuce, tomato, or salsa!
