Ingredients
- 2 cups seedless watermelon diced
- ½ red onion shallot can also be used, diced
- 1 jalapeno diced
- ½ cup cilantro chopped
- juice of a lime freshly squeezed
- ½ tsp salt
Instructions
- Chop the watermelon, removing it from the rind, and place in a large bowl.
- Chop the red onion, shallots, cilantro and add to the same bowl. Dress the salsa with fresh lime juice and the salt. Serve and enjoy.
