
Ham and Cheese Egg Bites

Ingredients
- 12 large eggs
- 1 tbsp Dijon mustard
- 1 cup cottage cheese reduced fat
- 6 oz cheddar cheese shredded
- 9 oz deli ham or canadian bacon
- salt to taste
- pepper to taste
Instructions
- Preheat the oven to 350℉.
- In a large bowl, crack your eggs and add the Dijon mustard, cottage cheese, salt and pepper. Add the mixture to a blender and blend until the cottage cheese and eggs become one cohesive mixture. Fold in the diced ham, salt and pepper.
- Pour the egg mixture into a greased muffin tin and top with 1-2 tbsp of cheddar cheese, each.
- Bake in the oven for 20-25 minutes or until the eggs are fully cooked and set in the middle. Remove from the oven and enjoy immediately, or separate into individual servings and reheat as needed. These can be frozen or refrigerated for up to 5 days.
