Ingredients
- 3/4 cup rolled oats
- 3/4 cup peanut butter natural
- 2 TBSP maple syrup
- 2/3 cup dark chocolate chips optional: sugar-free chocolate chips
- 1/2 tsp coconut oil
Instructions
- Place the rolled oats into a blender or food processor and pulverize until a flour consistency forms. Pour into a large mixing bowl and set aside.
- Next, combine the peanut butter and maple syrup in a microwave-safe bowl and melt for 30-60 seconds or until the two come together. Pour the peanut butter mixture over the oatmeal flour and combine well until fully incorporated.
- Using a mini muffin tin, divide the oatmeal/peanut butter mixture across 12 mini muffin cups. Pack the mixture into the bottom of the muffin tin well.
- In a separate microwave-safe bowl, add the dark chocolate chips and coconut oil, and microwave for 30 seconds and then in 15-second intervals until the chocolate is fully melted. Mix the chocolate and coconut oil mixture well before spooning over roughly 1 TBSP of melted dark chocolate over the oatmeal base. Lightly tap the muffin tin on the counter to remove any air bubbles and even the chocolate in the tins before placing them in the refrigerator for roughly 2 hours or until the chocolate topping has set.
