Summertime Salad with Blueberries & Peaches
Summertime salads are a great way to enjoy the bounty of the season. This salad, in particular, uses fresh peaches and delicious ripe blueberries. Salty, creamy Gorgonzola cheese is added along with rich walnuts to add additional texture and a boost of flavor. Serve with a delicious side of grilled chicken or fish for a perfect summertime lunch.

Ingredients
Salad Toppings
- 4 cups salad greens
- 1 cup fresh blueberries washed
- 2 peaches ripe, sliced thin
- 1/2 cup gorganzola cheese crumbled
- 1/4 cup walnuts toasted, if preferred
Lemon Dijon Dressing
- 1/4 cup olive oil extra virgin
- 2 TBSP lemon juice
- 1 TBSP honey
- 1 tsp dijon mustard
- salt and pepper to taste
Instructions
- Wash your salad greens and dry them well, then add them to a large bowl.
- In a smaller bowl, add the olive oil, Dijon mustard, lemon juice, honey, salt and pepper. Whisk until the dressing is emulsified and cohesive.
- Pour the dressing over the salad greens and toss the greens until they are coated in the dressing.
- Next, wash and dry your blueberries and peaches. Slice your peaches into thin wedges and top the salad greens with the fresh fruit. Sprinkle over the Gorgonzola cheese and walnuts.
- Serve as a side dish to a meal, or as a lunch salad topped with a good source of lean protein such as grilled chicken or fish. Enjoy!
