Ingredients
- 1 lb green beans trimmed
- 2 TBSP olive oil extra virgin
- 2 garlic cloves minced
- 1/2 cup parmesan freshly grated
- 1/2 lemon juiced
- salt and pepper to taste
- parsley for garnish
Instructions
- Preheat your oven to 400℉ and line a large baking pan with parchment paper.
- Trim the ends off your green beans, and add them to a large bowl. Drizzle the olive oil over the green beans and toss in your minced garlic. Sprinkle with salt and pepper, and combine the green beans with the additional ingredients until the green beans are coated with the olive oil and the garlic, salt, and pepper are well dispersed.
- Lay the green beans flat on the baking pan in a single layer and sprinkle the parmesan cheese over the top.
- Pop the pan into the preheated oven and roast for roughly 20 minutes or until the beans are vibrantly green, cooked through, but maintain a nice crunch.
- Remove the beans from the oven and squeeze half a lemon over the top. This will add a lovely brightness to the beans. Serve as a side with your favorite protein like steak, grilled chicken, or pork tenderloin.
