Ingredients

  • 4 chicken breasts large
  • 1-2 tbsp olive oil extra virgin
  • 2 garlic cloves crushed
  • 3 tbsp balsamic vinegar
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
  • 2 cups fresh strawberries chopped
  • 1 cup fresh basil chopped

Instructions

  • Start by preparing your chicken breasts – you can butterfly cut them or pound them with a mallet to help make them thinner.
  • Add your balsamic vinegar, salt, pepper, and garlic in a large bowl and marinate the chicken for 10 minutes.
  • Next, heat a large grill pan or skillet to medium heat.
  • Add your oil to the pan or skillet before adding your chicken breasts. Cook for 3-5 minutes per side or until the chicken reaches an internal temperature of 165℉.
  • While the chicken is cooking, prepare your strawberry basil topping. Hull and quarter your strawberries and add to a bowl. Next, chop your fresh basil and add to the strawberries.
  • Once the chicken has cooked through, remove it from the stove and top it with the strawberry-basil mixture. Serve immediately.
