Lemon Herb Couscous
Couscous is a perfect side dish to a protein-rich meal. Tiny pearls of semolina are tossed in lemon, olive oil, and herbs for a tart and flavorful grain side dish!

Ingredients
- 1 cup pearl couscous
- 1 ½ cups water
- 1/2 lemon juiced
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 2 TBSP fresh herbs parsley, basil, oregano, chopped finely
- 1/4 cup olive oil
Instructions
- Over medium heat, add 2 tbsp of olive oil to a small saucepan. Add the pearl couscous to the oil and toast for 2 minutes or until the couscous begins to turn golden brown.
- Pour the water, or chicken broth if you like, into the pot and bring to a boil. Once boiling, turn the heat down to low, cover the pot and simmer for 15 minutes or until the liquid is absorbed.
- Turn off the heat and stir in the lemon juice, the remaining olive oil, black pepper, garlic powder, and fresh herbs. Taste and adjust the seasoning as needed. Serve warm!
