Easy Mahi-Mahi Tacos
Tacos are a delicious treat filled with fresh veggies, protein, and healthy whole grains. This mahi-mahi taco is simple in its preparation but full of flavor. A toasted tortilla is topped with a creamy cabbage slaw, served with a delicious air-fried mahi mahi and topped with fresh cilantro. Quick, easy, and tasty – a perfect dinnertime meal!

Ingredients
- 1 lb mahi-mahi skinless filets
- 8 corn tortillas yellow
- cilantro optional
- 4 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp salt
- 2 TBSP lime juice
- 3 TBSP olive oil extra virgin
Creamy Cabbage Slaw
- 1 green cabbage head small, julienned
- 1/2 cup milk 2%
- 1/2 cup mayonnaise
- 1 TBSP sugar
- 1 tsp white vinegar
- 1/4 tsp cayenne pepper
- 1/4 tsp kosher salt
Instructions
- Start by making the slaw for the tacos. Use a pre-shredded slaw mix for this, or julienne a whole head of cabbage (sliced into thin strips). In a large mixing bowl, add the milk, mayonnaise, vinegar, sugar, cayenne pepper, and salt, and mix well until combined. Add the cabbage to the dressing mixture and combine well before putting into the fridge for at least 30 minutes.
- Next make the marinade for the mahi-mahi. Add the chili powder, cumin, paprika, garlic powder, onion powder, salt, lime juice, and olive oil to a large bowl and mix until combined.
- Cut your skinless mahi-mahi filet into small 1-inch cubes and place in the marinade. Cover with plastic film and sit in the refrigerator for 15 minutes.
- Once the mahi-mahi has had time to sit in the marinade, turn your air fryer on to 400℉ and place the fish in a single layer. Air fry for 15 minutes, turning or shaking the fish at the half-way point.
- While the fish is in the air fryer and the slaw is is the fridge, heat a small pan over medium heat warm your tortilla (you can dry toast this or you can add 1 tsp of olive oil).
- Once the mahi-mahi is done, assemble the tacos. Start by taking a toasted tortilla and lay a small bed of the slaw down then top with a generous amount of the fish. Garnish with a squeeze of lime and a bit of cilantro for a fresh and tasty dinnertime meal!
