Ingredients

  • 1½ cups whole wheat flour
  • 1½ cup all-purpose flour
  • 1 cup butter unsalted, very cold
  • 1 tsp salt kosher
  • 5 TBSP water ice cold
  • 1 TBSP white vinegar can be omitted if preferred, and an additional 1 TBSP of water can be added

Instructions

  • To a food processor, add the all-purpose and whole wheat flour, salt, and butter. Blitz the flour with the cold butter until the butter is distributed throughout the flour and creates a sandy texture.
  • Next, combine the vinegar with the ice water and slowly add to the flour, 1 TBSP at a time, blitzing in short bursts to just incorporate. Continue adding the water in 1 TBSP increments until the dough comes together.
    NOTE: The entire vinegar/water combination may not be needed, as humidity and the moisture content of the flour can add variations to the amount of liquid needed.
  • Once the pie dough has come together, separate into two and bring each pie dough portion into a uniform ball before wrapping with cling film and placing in the refrigerator to chill and rest for at least 1 hr and up to 2 days.
    NOTE: Refrigerating the pie dough after preparing will ensure a flaky pie crust when cooked!
  • When it is time to bake, roll out 1 crust about 1/8 in in thickness and use according to your recipe instructions.
