Zucchini & Fresh Corn Succotash

Succotash is a diverse vegetable dish that typically includes sweet corn and some kind of shelled bean, like lima beans or another pea variation. Ingredients

  • 1 TBSP olive oil extra virgin
  • 1 onion medium, diced
  • 2 garlic cloves minced
  • 1 zucchini medium, diced
  • 4 corn on the cob cooked and kernels removed
  • 1 15 oz canned black beans drained and rinsed
  • 2 TBSP fresh parsley chopped
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  • Heat a skillet over medium heat and add 1 TBSP of olive oil. Add the onion and garlic to the skillet and sweat until the onions are translucent and the mixture is fragrant.
  • Add the zucchini to the pan and saute for 4-5 minutes or until the zucchini begins to soften.
  • Next add the corn, that has been taken off the cob, and saute for another 3 minutes. Add the black beans, parsley, salt, and pepper. Continue cooking until the remaining ingredients have heated through. Serve with a protein of your choosing for a perfect dinner.
