Ingredients
- ½ lb whole wheat fusili pasta
- 1 lb ground turkey lean
- ½ yellow onion diced
- 1 TBSP olive oil
- 2 TBSP garlic minced
- 2 tsp Italian seasoning
- 1 16 oz marinara sauce jarred
- 1 cup mozzarella cheese shredded
- 1 10 oz frozen spinach defrosted and excess moisture squeezed out
- 1/2 cup ricotta cheese
- 1/2 cup cottage cheese 2% milk fat
- salt and pepper to taste
Instructions
- Preheat your oven to 375℉.
- In a large pot filled with salted boiling water, cook your pasta until it is 1-2 minutes shy of al dente. Once the pasta is cooked, drain it and set aside.
- In a large skillet, heat 1 TBSP of olive oil and saute the garlic and onion until translucent and fragrant. Next, add the ground turkey and cook until browned, then season with salt, pepper, and Italian seasoning. Add the meat and onion mixture to the pasta, then pour over 16 oz of your favorite store-bought marinara sauce and ½ cup of the shredded mozzarella cheese. Combine well.
- Take a baking sheet lined with parchment paper, pour the pasta mixture on, and arrange it in a thin layer. Top with the remaining mozzarella cheese.
- In a separate bowl, combine the drained spinach with 1/2 cup of cottage cheese and 1/2 cup of ricotta cheese. Combine well. Next, dollop the ricotta spinach mixture onto the sheet pan as much or as little as you like. Place in the oven and bake for 20 minutes or until the cheese melts and begins to brown.
- Serve with a green salad and enjoy!
