Equipment

  • Toaster
  • Stove

Ingredients

  • 4 English muffins whole wheat
  • 8 egg whites
  • 4 2 oz turkey sausage patty, or loose ground turkey meat
  • 1 cup baby spinach chopped
  • 4 slices provolone cheese
  • 1 avocado sliced, optional

Instructions

  • Begin by toasting the English muffins. This can be done either in a toaster or in an oven preheated to 350℉.
  • While the English muffins are toasting, preheat a non-stick skillet over medium heat.
  • Cook your turkey sausage patty. If you are using bulk turkey sausage meat, form 4, 2 according to the package instructions, or form into a patty in a pan, or purchase a premade turkey sausage patty. Cook the turkey sausage according to package instructions, or in a pan until fully cooked through.
  • Chop the spinach finely, then add it to a bowl with the 8 egg whites. Combine the spinach and the egg together.
  • In the same pan you cooked your turkey sausage, cook the egg. You can either cook the eggs directly in the pan and cut them into 4 pieces, or you can use a biscuit cutter to make individual egg patties. Make sure that the biscuit cutter is heat-resistant.
  • Once the egg and turkey sausage are cooked and the English muffins are toasted, assemble your sandwiches. Top 1 English muffin with ¼ of the cooked egg or 1 egg patty, 1 2-oz turkey sausage patty, 1 slice of provolone cheese, and ¼ of an avocado (sliced or mashed – optional).
