Turkey Chili Stuffed Sweet Potatoes

Chili is an incredibly nutrient-dense food that combines fiber-rich beans with protein-rich meat. However, fatty red meat, full-fat cheese, sour cream, and tortilla chips (often accompanied by a chili dish) are not the healthiest side options. Enter this recipe! Lean ground turkey is the protein source of this dish with savory, fiber-rich lentils. They come together in a delicious tomatoey sauce, including some extra vegetables for bulk and flavor, before being spooned over a delicious baked sweet potato. This combination increases the nutrient content of this dish and creates a pairing that will keep you feeling satiated all evening.

Ingredients

  • 4 sweet potatoes small
  • 2 TBSP olive oil extra virgin
  • 2 garlic cloves minced
  • 1 carrot diced
  • 2 celery stalks diced
  • 1 yellow onion small, diced
  • 1 red bell pepper diced
  • 1 tsp chili powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • 1 cup lentils
  • 8 oz canned tomato sauce low sodium
  • 3 cup chicken broth low sodium
  • 8 oz ground turkey
  • cup shredded cheddar cheese reduced-fat

Instructions

  • Preheat the oven to 400℉. Wash the sweet potatoes well and dry the skin. Prick the skin of each sweet potato with a knife and place them on a baking sheet. Bake for 1 hour or until the sweet potato is tender and easily pierced with a knife. The longer the sweet potato bakes, the richer in flavor it becomes!
  • In a large pot over medium heat, add 1 TBSP of olive oil, as well as the garlic, onion, celery, carrots, bell pepper, and spices. Saute for 5 minutes, stirring occasionally or until the vegetables have softened and the onion is translucent.
  • Add the ground turkey to the pot and cook, allowing the meat to brown. Then add in the lentils, tomato sauce, and chicken broth. Bring to a boil and simmer for 30 minutes.
  • Once the sweet potatoes are cooked, place one onto a plate, slicing it open and mashing its insides slightly. Scoop 1 cup of the chili mixture into the sweet potato boat and top with a few TBSP of shredded cheddar cheese. Add toppings like reduced-fat sour cream and green onions for extra flavor.
