Ingredients

For the Fajitas

  • 1½ lbs chicken breast boneless
  • 3 bell peppers cored and sliced into strips
  • 1 yellow onion sliced thin
  • 2 garlic cloves minced
  • 3 TBSP olive oil extra virgin
  • 1 lime juiced
  • ¼ cup fresh cilantro chopped

Fajita Seasoning

  • 1 TBSP chili powder
  • 1½ tsp paprika
  • 1½ tsp cumin
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ¼ tsp dried oregano
  • ¼ tsp cayenne pepper optional
  • 1½ tsp salt
  • ¾ tsp black pepper

Toppings

  • 10 flour tortillas street taco
  • sour cream optional
  • avocado optional
  • salsa or pico de gallo optional
  • shredded cheese or queso fresco optional
  • lettuce optional
  • refried beans optional

Instructions

  • Begin by pre-heating the oven to 425℉.
  • In a small mixing bowl, combine your fajita seasoning – chili powder, paprika, cumin, onion powder, garlic powder, dried oregano, cayenne, salt, and pepper. Set aside.
  • Prep your chicken breast, onion, and bell pepper; slicing everything into thin strips.
  • Add the chicken, bell pepper, and onion to a large mixing bowl and add the olive oil, garlic, lime juice, and fajita seasoning mix. Toss the chicken and veggies in the seasoning mixture well until everything is fully combined and coated.
  • Transfer the mixture to a baking sheet lined with parchment paper for easy clean-up and to prevent the fajitas from sticking. Make sure the chicken and veggies are in a single layer on the pan.
  • Place the pan into the oven and cook for 15-20 minutes or until the chicken reaches an internal temperature of 165℉. You may choose to toss the chicken and veggie mixture to ensure an even cook on all sides.
  • Wrap your tortillas in tin foil and place them in the same oven to warm for the last 5 minutes of cooking. Remove everything from the oven and serve with the warmed tortillas. Top the chicken mixture with more fresh lime juice if desired, a sprinkle of fresh cilantro, and build your own fajita with salsa, cheese, sour cream, lettuce, avocado, or refried beans.
